Abstract

Przedmiotem zgłoszenia jest musztarda, która zawiera glikozydy stewiolowe w postaci komponentu, składającego się ze zmikronizowanego błonnika, będącego nośnikiem oraz glikozydów w proporcjach wagowych odpowiednio od 95 - 99 : 5 - 1, w ilości całkowicie lub częściowo zastępującej cukier. Zgłoszenie zawiera też sposób otrzymywania musztardy z dodatkiem glikozydów stewiolowych, polega na tym, że do masy musztardowej dodaje się komponent otrzymany z glikozydów i błonnika, korzystnie owsianego poprzez mikronizację błonnika i wymieszanie go z glikozydami w temperaturze 15 - 20°C, korzystnie w czasie od 15 - 30 minut, przy czym składniki komponentu błonnik : glikozydy stosuje się w proporcjach wagowych odpowiednio od 95 - 99 : 5 - 1, przy czym komponent dodaje się w ilości całkowicie lub częściowo zastępującej cukier w musztardzie. In addition, the application also includes a sweetener and its use.
