Abstract

Przedmiotem zgłoszenia jest bakteryjna kultura starterowa zawierająca kulturę bakterii fermentacji mlekowej w postaci biomasy, charakteryzująca się tym, że w jej skład wchodzą co najmniej dwa szczepy: Lactobacillus plantarum o numerze B/00159 oraz Leuconostoc lactis o numerze B/00160 zdeponowane w Polskiej Kolekcji Mikroorganizmów (PCM) Instytutu Immunologii i Terapii Doświadczalnej PAN. Przedmiotem zgłoszenia jest również zakwas zawierający bakteryjną kulturę starterową, sposób wytwarzania pieczywa i zastosowanie bakteryjnej kultury starterowej lub zakwasu do wytwarzania pieczywa.The subject of the application is a bacterial starter culture containing a culture of lactic acid bacteria in the form of biomass, characterized by the fact that it includes at least two strains: Lactobacillus plantarum number B / 00159 and Leuconostoc lactis number B / 00160 deposited in the Polish Microbiological Collection ( PCM) of the Institute of Immunology and Experimental Therapy of the Polish Academy of Sciences. The subject of the application is also a sourdough containing a bacterial starter culture, a method of making bread and the use of a bacterial starter culture or sourdough for the production of bread.
