Abstract

Przedmiotem zgłoszenia jest dwuwarstwowa folia do przedłużania trwałości żywności, która ma pierwszą warstwę i drugą warstwę z osuszonych roztworów nakładanych kolejno na produkt spożywczy. Roztwór furcellaranu służący do wytworzenia pierwszej warstwy zawiera furcellaran rozpuszczony w wodzie destylowanej w ilości od 0,6% do 1,2% wagowo użytej wody destylowanej, który był pozostawiony do spęcznienia przez 0,9 – 1,1 godziny i następnie rozpuszczony dalej w trakcie mieszania w temperaturze od 180°C do 220°C do czasu uzyskania jednorodnego, klarownego roztworu foliotwórczego furcellaranu, a następnie schłodzony do temperatury od 50 C do 70 C, w ilości od 98,5% do 99,5% całkowitej masy pierwszego roztworu powłokotwórczego, i glicerol w ilości 0,5% do 1,5%, całkowitej masy pierwszego roztworu powłokotwórczego, dodany podczas mieszania do roztworu furcellaranu. Roztwór karboksymetylocelulozy (CMC) służący do wytworzenia drugiej warstwy zawiera karboksymetylocelulozę w ilości od 0,8% do 1,2% wagowo użytej wody destylowanej, w ilości od 97,0% do 99,0% całkowitej masy drugiego roztworu powłokotwórczego, glicerol w ilości 0,5% do 1 5% całkowitej masy drugiego roztworu powłokotwórczego, dodany podczas mieszania w temperaturze pokojowej do roztworu karboksymetylocelulozy oraz roztwór hydrolizatu żelatynowego (HGEL) ze skóry karpia otrzymany po rozpuszczeniu hydrolizatu żelatynowego (HGEL) ze skóry karpia w wodzie destylowanej w ilości od 1,5% do 7,5% wagowo użytej wody destylowanej, w ilości 0,5% do 1,5% całkowitej masy drugiego roztworu powłokotwórczego, dodany podczas mieszania w temperaturze pokojowej do roztworu karboksymetylocelulozy i glicerolu. Zgłoszenie obejmuje także sposób wytworzenia dwuwarstwowej folii do przedłużania trwałości żywności.The subject matter of the application is a two-layer food preservation film which has a first layer and a second layer of dried solutions applied sequentially to a food product. The furcellaran solution used to make the first layer contains furcellaran dissolved in distilled water in an amount of 0.6% to 1.2% by weight of the distilled water used, which was allowed to swell for 0.9 - 1.1 hours and then dissolved further during mixing at a temperature of 180°C to 220°C until a homogeneous, clear furcellaran film-forming solution is obtained, and then cooled to a temperature of 50°C to 70°C, in an amount of 98.5% to 99.5% of the total weight of the first film-forming solution , and glycerol in an amount of 0.5% to 1.5% of the total weight of the first film-forming solution, added to the furcellaran solution with stirring. The carboxymethyl cellulose (CMC) solution used to produce the second layer contains carboxymethyl cellulose in the amount of 0.8% to 1.2% by weight of distilled water used, in the amount of 97.0% to 99.0% of the total weight of the second coating solution, glycerol in the amount 0.5% to 15% of the total weight of the second film-forming solution, added with stirring at room temperature to the carboxymethyl cellulose solution and carp skin gelatin hydrolyzate (HGEL) solution obtained after dissolving carp skin gelatin hydrolyzate (HGEL) in distilled water in an amount of 1.5% to 7.5% by weight of distilled water used, in an amount of 0.5% to 1.5% of the total weight of the second film-forming solution, added with stirring at room temperature to the carboxymethylcellulose and glycerol solution. The application also includes a method of producing a two-layer film for extending the shelf life of food.
