Abstract

Przedmiotem zgłoszenia jest napój funkcjonalny na bazie wody komórkowej z jabłek charakteryzujący się tym, że składa się z 97 - 99,9% wody komórkowej z jabłek zawierającej substancje aromatyczne: ester etylowy kwasu butanowego, octan heptylu, heksanal, 2-metylobutanol, ester heksylowy kwasu octowego, 2-heksenal, heksanol, 2-heksen-1-ol, 2,4 (E,Z)-dekadienian etylu, nonanal, linalol, (E, E)-α-Farnezen, ester etylowy kwasu dodekanowego, dihydropseudoionon, kwas dodekanowy oraz 0,1 - 3% roztworu soli mineralnych o zawartości: kationów w tym: magnezu w ilości od 1 do 35,46 mg/l, sodu w ilości od 10 do 250 mg/l, potasu w ilości od 1 do 2,40 mg/l, oraz amonów w tym chlorków w ilości od 32,30 do 360 mg/l. Zgłoszenie dotyczy również sposobu wytwarzania napoju funkcjonalnego na bazie wody komórkowej pozyskanej z jabłek, który charakteryzuje się tym, że obejmuje następujące etapy: zatężanie soku jabłkowego metodą destylacji próżniowej z wyparek w wyniku czego otrzymuje się co najmniej dwie frakcje wody komórkowej zawierającej substancje aromatyczne: ester etylowy kwasu butanowego, octan heptylu, heksanal, 2-metylobutanol, ester heksylowy kwasu octowego, 2-heksenal, heksanol, 2-heksen-1-ol, 2,4 (E,Z)-dekadienian etylu, nonanal, linalol, (E, E)-α-Farnezen, ester etylowy kwasu dodekanowego, dihydropseudoionon, kwas dodekanowy, stabilizacja frakcji wody komórkowej pod względem eliminacji pestycydów i zanieczyszczeń poprzez filtrację z wkładem z węgla aktywowanego, mieszanie co najmniej dwóch frakcji wody komórkowej przy czym jedna z frakcji zawiera najwyższą zawartość substancji aromatycznych, mikrofiltracja mieszaniny frakcji wody komórkowej z zastosowaniem membran ceramicznych 32 kanałowych typu isoflux, o porowatości 0,14 – 0,44 µm, mineralizacja mieszaniny frakcji wody komórkowej poprzez dodanie roztworu soli mineralnych o zawartości: kationów w tym: magnezu w ilości od 1 do 35,46 mg/l, sodu w ilości od 10 do 250 mg/l, potasu w ilości od 1 do 2,40 mg/l, oraz anionów w tym chlorków w ilości od 32,30 do 360 mg/l, ultrafiltracja mieszaniny z zastosowaniem membran polimerowych o porowatości 10000 — 200000 kDa.The subject of the application is a functional drink based on apple cell water characterized by the fact that it consists of 97 - 99.9% apple cell water containing aromatic substances: butanoic acid ethyl ester, heptyl acetate, hexanal, 2-methylbutanol, hexyl acid ester acetic acid, 2-hexenal, hexanol, 2-hexen-1-ol, ethyl 2,4 (E,Z)-decadienoate, nonanal, linalool, (E, E)-α-Farnezene, dodecanoic acid ethyl ester, dihydropseudoionone, acid dodecane and 0.1 - 3% solution of mineral salts containing: cations, including: magnesium in the amount from 1 to 35.46 mg/l, sodium in the amount from 10 to 250 mg/l, potassium in the amount from 1 to 2, 40 mg/l, and ammonium, including chlorides, in amounts ranging from 32.30 to 360 mg/l. The application also concerns a method for producing a functional drink based on cell water obtained from apples, which is characterized by the following steps: concentrating apple juice by vacuum distillation from evaporators, as a result of which at least two fractions of cell water containing aromatic substances are obtained: ethyl ester butanoic acid, heptyl acetate, hexanal, 2-methylbutanol, acetic acid hexyl ester, 2-hexenal, hexanol, 2-hexen-1-ol, ethyl 2,4 (E,Z)-decadienoate, nonanal, linalool, (E, E)-α-Farnezene, dodecanoic acid ethyl ester, dihydropseudoionone, dodecanoic acid, stabilization of the cell water fraction in terms of the elimination of pesticides and pollutants by filtration with an activated carbon cartridge, mixing at least two cell water fractions, with one of the fractions containing the highest content aromatic substances, microfiltration of the mixture of cell water fractions using 32-channel isoflux ceramic membranes with a porosity of 0.14 - 0.44 µm, mineralization of the mixture of cell water fractions by adding a solution of mineral salts containing: cations, including: magnesium in an amount of 1 up to 35.46 mg/l, sodium in the amount from 10 to 250 mg/l, potassium in the amount from 1 to 2.40 mg/l, and anions including chlorides in the amount from 32.30 to 360 mg/l, ultrafiltration mixtures using polymer membranes with a porosity of 10,000 - 200,000 kDa.
