Abstract
Przedmiotem zgłoszenia są trwale materiały alginianowe naturalnie żelowane wodnym roztworem ekstraktu sproszkowanych owoców Acai (Euterpe oleracea) i maltodekstryny charakteryzujące się tym, że zawierają alginian sodu w stężeniu od 7,5 do 15 g/L i wodny roztwór ekstraktu sproszkowanych owoców Acai i maltodekstryny w stężeniu co najmniej 40 g/L. Zgłoszenie dotyczy również sposobu wytwarzania trwałych materiałów alginianowych naturalnie żelowanych wodnym roztworem ekstraktu sproszkowanych owoców Acai (Euterpe oleracea) i maltodekstryny charakteryzującego się tym, że wodny roztwór alginianu sodu o stężeniu w zakresie od 7,5 do 15 g/L podgrzewa się do temperatury 40°C — 50°C, a następnie miesza się z wodnym roztworem ekstraktu sproszkowanych owoców Acai (Euterpe oleracea) i maltodekstryny w stosunku 3:1 (alginian sodu : ekstrakt Acai i maltodekstryny), tak aby stężenie końcowe wodnego roztworu ekstraktu sproszkowanych owoców Acai (Euterpe oleracea) i maltodekstryny wynosiło co najmniej 40 g/L, tak powstałą mieszaninę przelewa się do form o dowolnym kształcie i pozostawia w czasie od 0,5 do 24h temperaturze od 4°C do 25°C do całkowitego zżelowania. The application also concerns a method for producing durable alginate materials naturally gelled with an aqueous solution of an extract of powdered Acai fruit (Euterpe oleracea) and maltodextrin, characterized by the fact that an aqueous solution of sodium alginate with a concentration ranging from 7.5 to 15 g/L is heated to a temperature of 40° C - 50°C, and then mixed with an aqueous solution of the extract of powdered Acai fruit (Euterpe oleracea) and maltodextrin in a ratio of 3:1 (sodium alginate: Acai extract and maltodextrin), so that the final concentration of the aqueous solution of the extract of powdered Acai fruit (Euterpe oleracea) and maltodextrin was at least 40 g/L, the resulting mixture is poured into molds of any shape and left for 0.5 to 24 hours at a temperature of 4°C to 25°C until complete gelation. The subject of the application is also the use of durable alginate materials naturally gelled with an aqueous solution of the extract (10:1) of powdered Acai fruit (Euterpe oleracea) and maltodextrin specified in claim. 1 as a food, in particular for vegetarian and vegan diets.
