Abstract

Przedmiotem zgłoszenia jest zastosowanie hydrolizatu białka owsa w produkcji wyrobów mięsnych jako dodatku stabilizującego barwę produktu i zatrzymującego wodę w wyrobach mięsnych, przy czym hydrolizat otrzymuje się z ziaren owsa, z których usunięto uprzednio β-glukany oraz sposób wytwarzania hydrolizatu białka owsa z odpadów poprodukcyjnych syropu β-glukanowego.
