Abstract
Przedmiotem wynalazku jest zamiennik jaja kurzego niezawierający składników pochodzenia zwierzęcego (odpowiedni dla osób na diecie wegańskiej) do stosowania w produktach spożywczych, Celem wynalazku jest przedstawienie składu i proporcji suchej kompozycji składników, przeznaczonej do mieszania (rozrabiania) z wodą, pozwalającej na uzyskanie stałych właściwości organoleptycznych oraz odwzorowania większości własności fizycznych i chemicznych jaja kurzego. Zamiennik jaja kurzego niezawierający składników pochodzenia zwierzęcego występuje w stanie suchego proszku składającego się z hydrofilowych polimerów w postaci polisacharydów lub pochodnych do polisacharydów substancji (od 6% do 10% wagowych suchej kompozycji), białka roślinnego (od 8% do 15% wagowych suchej kompozycji), drożdży nieaktywnych (4% wagowych suchej kompozycji), gumy guar (3,5% wagowych suchej kompozycji), skrobi z tapioki (od 70% do 78,5% wagowych suchej kompozycji), a w innej wersji wynalazku z karagenu (od 3% do 5% suchej kompozycji), białka roślinnego (od 8% do 15% wagowych suchej kompozycji), drożdży nieaktywnych (4% wagowych suchej kompozycji), gumy guar (3,5% wagowych suchej kompozycji), skrobi z tapioki (od 72,5% do 80% wagowych suchej kompozycji), i przed zastosowaniem podlega rozrobieniu z wodą w stosunku 10% proszku do 90% wody.
