Abstract
สูตรและกระบวนการการผลิตสารเคลือบผิวผลไม้จากบุก เมื่อนำส้มเขียวหวานมาเคลือบผิวด้วยสาร เมือกจากบุก และรักษาส้มเขียวหวานไว้ที่อุณหภูมิ 5 ํC พบว่า สารเคลือบผิวจากบุกสามารถชะลอ การเปลี่ยนแปลงทางสรีรวิทยาของผลส้มเขียวหวานได้ดีกว่าผลส้มเขียวหวานที่ไม่ได้ทำการเคลือบผิว (ชุด ควบคุม) โดยสามารถยืดอายุการเก็บรักษาผลส้มได้นาน 42 วัน
