Abstract

Изобретение относится к способу изготовления сыра, созревающего в фольге, который предусматривает (i) помещение сыра после его выдерживания в рассоле в упаковку для созревания сыра, которая содержит отверстие для помещения сыра, (ii) закрывание упаковки и (iii) созревание сыра, причем упаковка для созревания сыра содержит термопластическую, выполненную в виде единого целого пленку, причем закрытая упаковка для созревания сыра имеет коэффициент проницаемости водного пара, равный при 10 °C и относительной влажности 85 % по крайней мере 10 г/м2/24 часа, и показатель проницаемости кислорода, который составляет при 10 °C и относительной влажности 85 % не более 100 см3/ м2/24 ч./атм. Изобретение относится также к упаковке для созревания сыра, которая содержит отверстие для помещения предназначенного для созревания сыра и к созревающему в фольге сыру, включающему сыр и упаковку для созревания сыра, причем сыр не содержит полимерного покрытия на поверхности созревшего сыра.
