Abstract
Способ изготовления сыра, в соответствии с которым получают сырный сгусток, из этого сырного сгустка изготавливают промежуточную сырную пасту, полученную сырную пасту подвергают первой обработке при температуре от 40 °C до 90 °C, выполняют текстурирующую обработку при температуре первой обработки для получения текстурированной пасты, текстурированную пасту подвергают второй термической обработке путем электрического нагрева при температуре от 80 °C до 140 °C в течение от 10 с до 5 мин, полученную пасту охлаждают до температуры ниже 100 °C для получения сыра и упаковывают сыр.
