Спосіб визначення фальсифікації м'яса забійних тварин та птиці за обробки лужними дезінфікуючими засобами, причому використовують м'язову тканину площею розміром 2,0×2,5 см, на яку наносять градуйованою піпеткою 0,1-0,2 см3 спиртового розчину розолової кислоти з масовою концентрацією 0,25 % і через 1-2 секунди встановлюють відсутність або наявність малиново-червоного кольору різної інтенсивності в залежності від кількості нанесення дезінфікуючого засобу на поверхню: до 5 % - світло-малинового кольору та більше 5 % - малиново-червоного кольору.Method of determining falsification of meat of slaughtered animals and poultry by treatment with alkaline disinfectants, using a muscle tissue with an area of 2.0 × 2.5 cm, which is applied with a graduated pipette of 0.1-0.2 cm3 alcohol solution of rosolic acid with a mass concentration of 0.25% and after 1-2 seconds establish the absence or presence of raspberry-red color of different intensity, depending on the amount of disinfectant applied to the surface: up to 5% - light crimson color and more than 5% - crimson-red color .
