Abstract

 新規な水溶性食物繊維として利用できる非消化性ヒドロキシプロピル澱粉加水分解物、その製造方法及びそれを含む飲食品を提供する。DE値が20未満であり、グルコース含量が3質量%未満であることを特徴とする、非消化性ヒドロキシプロピル澱粉加水分解物;これを含む飲食品;及び置換度が0.05~0.4のヒドロキシプロピル澱粉を、(A)α―アミラーゼ、次いでグルコアミラーゼで加水分解する工程、及び(B)工程(A)で得られる加水分解物からグルコースを除去する工程を含むことを特徴とする、非消化性ヒドロキシプロピル澱粉加水分解物の製造方法。
