Abstract

 高濃度の非重合体カテキン類を水で溶出することが可能であり、しかも苦味及び収斂味が抑制されて風味が良好な加工茶を製造する。  本発明の加工茶の製造方法は、(A)エタノールと水との質量比が99/1~75/25の混合溶液中で緑茶抽出物を溶解抽出することにより得られた緑茶抽出物の精製物の造粒物と、(B)茶葉とを10/90~90/10の固形分質量比[(A)/(B)]で混合する工程を含むことを特徴とする。
