Abstract
La présente invention a trait à un échangeur de chaleur à surfaces grattées et multiples permettant de chauffer ou de refroidir des liquides ou des bouillies, lequel échangeur de chaleur est équipé d'un ensemble de trois tuyaux concentriques ou plus qui fournissent quatre surfaces de transfert de chaleur ou plus, trois d'entre elles pouvant être contrôlées de façon indépendante en termes de température et de débit. Les produits en bouillie sont refroidis ou chauffés sur l'ensemble de toutes les surfaces en ligne ou en parallèle. Des racloirs sont montés sur un ensemble rotor et sont mis sous tension de façon magnétique ou par ressort de manière à augmenter la mise en prise de surface et peuvent être façonnés de manière à améliorer le pliage et le mélange du produit.
