Machine à couper le fromage.
Un inconvénient fort désagréable a été jusqu'ici, dans les laiteries, chez les commerçants ou en général les représentants de cette branche, le manque d'un dispositif approprié et non trop compliqué pour le découpage des gros pains de fromage de forme ronde ou angulaire. La méthode par trop primitive, em- ployée jusqu'ici pour la division du fromage, par laquelle le pain est découpé en morceaux de la grandeur voulue au moyen d'une ficelle ou d'un fil métallique mû d'une façon appropriée n'est pas seulement trop lente et peu pratique, mais surtout antihygiénique au plus haut degré.
Ces inconvénients sont complètement supprimés par la présente invention, qui a pour objet une maohine pour le décou- page ou la division de pains de fromage. La nouveauté réside dans le fait que la division en morceaux quelconques du pain de fromage se trouvant sur une table de forme circulaire ou

autre pouvant tourner, se déplacer et être mise au point a lieu au moyen d'un couteau mû mécaniquement et disposé, de manière à être interchangeable, sur un levier à deux bras.
Le dessin ci-joint représente un exemple d'exécution de l'objet de l'invention.

Sur un support 1 de forme appropriée et porté par des pieds 2 est disposée une plaque 5 pouvant se déplacer longitu- dinalement au moyen de glissières 3 et de galets de glissement 4. Sur la plaque 5 est placée une table 7 offrant un appui au pain de fromage 6 et pouvant tourner dans un palier 8 et se déplacer conjointement avec la plaque 5.. La fondation 9 de la machine à couper le fromage proprement dite est fixée au moyen de boulons 10 ou d'autres moyens de fixation au support fixe 1.
Dans le bras-support 11 établi de manière appropriée est monté, autour de l'axe 12, un levier à deux bras 13 qui porte le cou- teau 14 fixé à ce levier au moyen de vis 15 etc. de manière à être amovible et interchangeable. L'extrémité du levier à deux bras 13 pénétrant dans un guide 16 est articulé par une cheville 17 à la pièce terminale 18 établie en forme de four- che de la crémaillère 19. La crémaillère 19 engrène avec la roue dentée 22 disposée dans la partie supérieure du guide 16, et ce sur l'axe 20, et mue par une manivelle à main 21. Entre les leviers 23 tournant également sur l'axe 20 est disposé, de manière à pouvoir tourner, un rouleau de guidage 24 appuyant la crémaillère 19. La butée déplaçable 25 prévue dans le guide

Lorsque le pain de fromage.6 doit être coupé, on fait tour- ner, par l'actionnement de la manivelle 21, la roue dentée 22 qui, à son tour, influence ou élève la crémaillère 19. Par sui- te de ce mouvement d'élévation de la crémaillère 19, la partie du levier 13 qui est articulée à l'extrémité de la crémaillère
19 par la cheville 17 oscille aussi vers le haut et, par suite, le couteau 14 est introduit dans la pain de fromage 6.
Le cou- teau 14 ne pénétrera donc pas dans le, pain de fromage dans la direction verticale en y refoulant les particules de fromage par pression, mais, comme chaque partie du tranchant du couteau est conduite suivant une trajectoire exactement circulaire ayant comme centre le point de pivotement 12, le dit couteau découpe- ra correctement le fromage.; Lors du mouvement d'élévation de la crémaillère 19, l'angle que forme celle-ci avec le levier 19 s'agrandit progressivement, de sorte que la crémaillère 19 mise en mouvement change aussi constamment sa position oblique. Le rouleau de guidage tournant 24 disposé entre les leviers oscil- lants 23 appuie, en cela, la crémaillère 19, et ce dans toute position oblique.
La butée 25,établie d'une manière quelconque limite la course du levier 13 vers le haut, selon la mise au point, lorsque le couteau 14 repose sur la table 7, donc lorsque le fromage est coupé de part'en part. Les tranches ou les morceaux en'forme de coins peuvent être découpés entièrement selon les besoins et selon les préférences, étant donné qu'il suffit de faire tourner la table 7 autour du palier 8 ou de la déplacer pour obtenir l'angle voulu ou le morceau droit.
