  Procédé pour augmenter la quantité de fromage à séparer du lait. 



   Ün produit accessoire obtenu lors de la fabrication du fromage est constitué par le petit-lait un liquide qui   contient   environ 2% de sels, 4% de sucre de lait et 4% de matières albuminoïdes. Ceci est vrai toutefois seulement pour un petit lait qui est parfaitement clair et exempt de flocons de caséine en suspension. Les petits-laits tels qu'on les obtient dans les laiteries sont au contraire troubles et contiennent des matières   albuminoides,   non seulement mécaniquement en suspension mais encore combinées chimiquement, comme la caséine et l'albumine.

   C'est sur ce fait que repose la valeur nutritive élevée des petits-laits qui est démontrée à suffisance par l'emploi de petits-laits comme aliments pour les pores ou par le traitement des petits-laits pour l'obtention de préparations nutritives diététiques.
