Appareil pour attendrir la viande.
Le brevet principal concerna un appareil pour attendrir la viande par pénétration de lames disposées côte à côte sur un porte-lames et aidées dans un plateau rainuré prenant appui sur la viande.
La présente invention a pour but essentiel de réaliser un dispositif qui s'oppose à tout aplatissement de la viande par le plateau rainure lorsque ce dernier vient en contact avec alle
A cette fin l'invention prévoit que le blocage en position du plateau rainure, lorsqu'il arrive au contact de la viande à traiter, est effectué par un verrou poussé en engagement avec une partie fixe de l'appareil, sous l'effet du déplacement relatif du porte-lames par rapport au plateau rainure.
L'invention prévoit également que le dit verrou est normalement maintenu en position inopérante centre l'action d'un ressort antagoniste par un organe solidaire du porte-lames.
Il est prévu suivant l'invention que le dit orne est constitué par un doigt orienté verticalement qui est embrassé par le verrou et dont la face extérieure est pourvue d'un plan incliné.

Les dessins annexés indiquent titre d'exemple non limitatif un mode d'exécution de l'invention. Celle-ci s'étend aux diverses particularités originales que comporte la disposition représentée.
La fig.l est une coupe longitudinale et partielle réalisée dans l'appareil à attendrir la viande suivant l'invention.
La fig.2 est une coupe suivant A-A dans la fig.l.
Dans l'appareil à attendrir la viande suivant l'in- vention sur l'extrémité supérieure du tube 4 auquel est fixé le porte-lames 3 est vissée une bague 40 qui est bloquée; cette bague est pourvue d'un doigt vertical 42 dont la position en hauteur peut âtre réglée à volonté. Ce doigt est pourvu sur sa face extérieurs d'un plan incliné 43 dont le but sera défini et expliqué ultérieurement.
Sur la bague 40 prend appui une autre bague 44 qui est pourvue d'un trou 45 d'allure rectangulaire destiné à permettre le passage du doigt 42. Sur la bague 44 prend appui un verrou 46 pourvu élement d'une ouverture 47 destinée à permettre le passage du doigt 42. Enfin une pièce de fermeture 48 vient compléter l'assemblage. Cette pièce est solidarisée par le moyen d'un écrou 49 avec l'extrémité supérieure de la tige 7 sur laquelle est monté le plateau rainure 6. Il est en outre à remarquer qu'un ressort 49a est insère entre l'extrémité supérieure de la tige 7 et la face interne avant du verrou 46.
Lorsqu'on manoeuvre le dispositif de mise en marche de l'appareil non figuré, le porte-lames 3 et le plateau rainuré 6 s'abaissent simultanément, l'un (porte-lame) par commande

directe et l'autre (plateau rainure) par gravité.
Après une certaine course d'enfoncement simultané de ces deux organes, le plateau rainure 6 vient prendra appui sur la viande à traiter. A partir de ce moment il importe de bloquer er, déplacement la plateau rainure 6 de manière à éviter que ce dernier n'abîme la viande.
Ce blocage du plateau rainuré est opéré de la manière suivante : Lorsque le plateau rainuré 6 vient en contact de la viande à traiter ce plateau est arrêté, pendant que le porte- lames 3 continue son déplacement vers le bas. Il s'ensuit par conséquent que le doigt 42 qui est solidaire du tube 4 par l'in- termédiaire de la bague 40 est entraîné également vers le bas.
Après une certaine course d'enfoncement du doigt 42 le plan incliné 43 du doigt 42 s'efface de la région du verrou 46 et ce dernier est poussé vers l'avant et en engagement avec des dents 50 ménagée, dans la gaine axtérieura 15, par le ressort 49 qui peut se détendre. A partir de ce moment le plateau 6 est bloqué en engagement et ne peut par conséquent plus se déplacer ni vers le bas, ni vers le haut. Ce plateau restera bloqué en position jusqu'au moment où sous l'action du ressort 13 qui se détend le tube 4 et par conséquent le doigt 42 seront ramenés à leur position initiale.
Dans cette position le plan incliné 43 du doigt 42 vient sgir sur le verrou 46 et le dégage des dents du tube extérieur 15 contre l'action du ressort 49a qui est comprimé contre l'extrémité supérieure de la tige 7.
Il est à remarquer que le. mécanisme de commande du porte- lames et du plateau rainuré ainsi que le mécanisme de blocage de ce dernier sont logés dans une gaine extérieure et centrale 15 qui sert de boite à graisse et qui est pourvue d'un bourrage 52

pour éviter l'écoulement de la graisse consistante qui garnit la gaine extérieure 15. En outre le porte couteau 3 est vissé en 53 sur l'extrémité inférieure du tube 4.
Il va de soi que l'invention n'est nullement limitée au mode de réalisation décrit à titre d'exemple mais qu'elle s'étend à tout apparail pour attendrir la viande entrant dans l'esprit ou l'étendue des revendications suivantes.

Appareil pour attendrir la viande par pénétration de lames disposées côte à côte sur un porte-lames et guidées dans un plateau rainuré prenant appui sur la viande et s'abaissant en même temps que le porte-lames c a r a c t érisé en ce que le blocage en position du plateau lorsqu'il arrive au contact de la viande à traiter est effectué par un varrou poussé en engagement avec une partie fixe de l'appareil sous l'effet du déplacement relatif du porte-lames par rapport au plateau rainuré.

Apparatus for tenderizing meat.
The main patent relates to an apparatus for tenderizing meat by penetrating blades arranged side by side on a blade holder and aided in a grooved tray resting on the meat.
The main object of the present invention is to provide a device which opposes any flattening of the meat by the grooved plate when the latter comes into contact with the groove.
To this end, the invention provides that the locking in position of the groove plate, when it comes into contact with the meat to be treated, is effected by a latch pushed into engagement with a fixed part of the device, under the effect of relative movement of the blade holder with respect to the groove plate.
The invention also provides that said lock is normally maintained in the inoperative position centered on the action of an opposing spring by a member integral with the blade holder.
It is provided according to the invention that said ornament is constituted by a vertically oriented finger which is embraced by the latch and whose outer face is provided with an inclined plane.

In the meat tenderizing apparatus according to the invention on the upper end of the tube 4 to which the blade holder 3 is fixed is screwed a ring 40 which is blocked; this ring is provided with a vertical finger 42 whose height position can be adjusted at will. This finger is provided on its outer face with an inclined plane 43, the purpose of which will be defined and explained later.
On the ring 40 rests another ring 44 which is provided with a rectangular hole 45 intended to allow the passage of the finger 42. On the ring 44 rests a latch 46 provided element with an opening 47 intended to allow the passage of the finger 42. Finally, a closure part 48 completes the assembly. This part is secured by means of a nut 49 with the upper end of the rod 7 on which is mounted the groove plate 6. It should also be noted that a spring 49a is inserted between the upper end of the rod 7 and the internal front face of the lock 46.
When operating the device for starting the device (not shown), the blade holder 3 and the grooved plate 6 are lowered simultaneously, one (blade holder) per command

direct and the other (grooved plate) by gravity.
After a certain stroke of simultaneous insertion of these two members, the groove plate 6 comes to rest on the meat to be treated. From this moment it is important to block and move the groove plate 6 so as to prevent the latter from damaging the meat.
This locking of the grooved tray is operated as follows: When the grooved tray 6 comes into contact with the meat to be treated, this tray is stopped, while the blade holder 3 continues its downward movement. It follows therefore that the finger 42 which is integral with the tube 4 by means of the ring 40 is also driven downward.
After a certain driving stroke of the finger 42, the inclined plane 43 of the finger 42 disappears from the region of the latch 46 and the latter is pushed forward and into engagement with teeth 50 formed in the outer sheath 15, by the spring 49 which can relax. From this moment the plate 6 is blocked in engagement and can therefore no longer move either downwards or upwards. This plate will remain blocked in position until the moment when under the action of the spring 13 which relaxes the tube 4 and consequently the finger 42 will be returned to their initial position.
In this position, the inclined plane 43 of the finger 42 sits on the latch 46 and releases it from the teeth of the outer tube 15 against the action of the spring 49a which is compressed against the upper end of the rod 7.
It should be noted that the. control mechanism of the blade holder and the grooved plate as well as the locking mechanism of the latter are housed in an outer and central sheath 15 which serves as a grease box and which is provided with a packing 52

to prevent the flow of the consistent grease which lines the outer sheath 15. In addition, the knife holder 3 is screwed at 53 on the lower end of the tube 4.
It goes without saying that the invention is in no way limited to the embodiment described by way of example but that it extends to any apparatus for tenderizing meat coming within the spirit or the scope of the following claims.
CLAIMS.
1. Apparatus for tenderizing meat by penetrating blades arranged side by side on a blade holder and guided in a grooved tray resting on the meat and lowering at the same time as the blade holder characterized in that the blocking in the position of the tray when it comes into contact with the meat to be treated is effected by a lock pushed into engagement with a fixed part of the device under the effect of the relative movement of the blade holder relative to the grooved tray.
