Abstract

On charge au départ un support adsorbant d'une quantité d'enzyme inférieure à la capacité de charge maximale de l'adsorbant, on suit l'activité de l'enzyme et on ajoute périodiquement de l'enzyme fraiche afin de maintenir en continu un niveau constant d'activité jusqu'au moment où l'on atteint la capacité de charge maximale du support. L'invention est utile particulièrement pour maintenir l'activité d'une glucose-isomèresa immobilisée dans une réaction et peut etre utilisée à la production du fructose à partir du glucose.
