Abstract
"PASTA ALIMENTìCIA E MéTODO PARA PRODUZIR UMA PASTA ALIMENTìCIA". A presente invenção refere-se a uma pasta alimentícia contendo uma mistura de pelo menos um óleo comestível não hidrogenado, de origem natural ou sintética, e um monoglicerídeo. Além disso, a pasta da presente invenção não contém uma fase aquosa. O óleo é preferivelmente um ou mais dentre os óleos compreendendo óleo de oliva, óleo de abacate, óleo de canola, óleo de soja, óleo de girassol, óleos de nozes, óleo de nogueira, óleo de amendoim, óleo de açafrão, óleo de sementes de algodão, óleo de coco, óleo de farelo de arroz, óleo de sementes de mostarda, óleo de camelina, óleo de salvia, óleo de linhaça, óleo de perila, óleo de peixe, óleo de palmeira, óleo de sésamo, óleo de germe de trigo, óleo de jojoba ou óleo de milho. Mais preferivelmente, um óleo, como por exemplo, óleo de abacate, óleo de peixe, óleo de palmeira ou óleo de oliva é usado e, ainda mais preferivelmente, o óleo é óleo de oliva e óleo de peixe. Os monoglicerídeos usados são preferivelmente derivados de ácido oléico e palmítico. O óleo está presente preferivelmente em uma quantidade de cerca de 85 a cerca de 98 por cento e ainda mais preferivelmente, em uma quantidade de cerca de 93 a cerca de 96 por cento. Quanto mais monoglicerídeo for usado, maior o grau de solidez da pasta alimentícia em temperatura ambiente. Portanto, é possível produzir um grau de solidez desejado, mudando-se a proporção do monoglicerídeo.
