Abstract

"MUTANTE DE BACTéRIA LáCTICA SUPERPRODUTORA DE EXOPOLISSACARìDEOS, UTILIZAçãO DO MESMO E áCIDO NUCLEICO CODIFICANDO UMA ALFA-FOSFOGLUCOMUTASE". A presente invenção tem por objeto mutantes de bactérias lácticas superprodutoras de exopolissacarídeos após uma mutação no gene codificando a alfa-fosfoglucomutase. Estes mutantes são utilizáveis notadamente para a preparação de produtos fermentados ou a produção de exopolissacarídeos.
