Abstract

"SOBREMESA GELADA, PROCESSO PARA OBTê-LA E RECIPIENTE PARA ACONDICIONá-LA E DISTRIBUì-LA". A invenção refere-se a uma sobremesa gelada, que, independentemente de qualquer incorporação de gás, é maleável e extrudável à temperatura, de congelamento. Essa sobremesa compreende a água, proteínas, matérias graxas, agentes açucarantes e pelo menos um agente estabilizante, esses agentes açucarantes formando uma mistura, que comporta glicose e eventualmente frutose, esses dois compostos constituindo, em seu conjunto, de 6 a 30% do peso total da composição. A sobremesa gelada compreende um agente de nucleação, notadamente a celulose microcristalina. A invenção refere-se, além disso, a um processo de obtenção dessa sobremesa, a essa sobremesa acondicionada e a um recipiente pára seu acondicionamento e sua distribuição.
