Abstract
"REVESTIMENTO AROMATIZADO COM TEOR DE GORDURA REDUZIDO E MéTODOS DE USO DO MESMO". Um revestimento aromatizado com teor de gordura reduzido incluindo uma quantidade suficiente de agente aromatizante, por exemplo, cacau, para fornecer um sabor selecionado, uma matriz de cristais de açúcar e açúcar glass dispersos através do agente aromatizante em uma quantidade eficaz para fornecer o revestimento com a integridade estrutural suficiente para prevenir que se torne líquido em temperaturas menores que cerca de 40<198>C, e um grande número de microesferas incluindo um componente de hidrocolóide seco que estão dispersas através da matriz do agente aromatizante e da matriz de açúcar para fornecer uma sensação bucal escorregadia que imita a gordura e começa a dispersar-se quando entra em contato com a saliva para imitar o derretimento da manteiga de cacau durante o consumo do chocolate, em que o revestimento aromatizado é pelo menos substancialmente desidratado e tem menos do que cerca de 10 por cento em peso de gordura, e em que a gordura presente exista como microgotículas dispersas.
