Abstract

"AGENTE TROPICALIZANTE E MéTODOS PARA FABRICAçãO E USO DO MESMO". A presente invenção refere-se a um agente tropicalizante incluindo um componente de gordura líquida e uma pluralidade de pérolas de géis que incluem um açúcar ou poliol na quantidade de cerca de 20 a 50 por cento em peso de pérolas de géis, um componente emulsificante para facilitar distribuição uniforme de contas de gel, o remanescente sendo água presente em uma quantidade suficiente para assegurar que o açúcar ou poliol estejam presentes na forma aquosa. Preferencialmente, o componente de gordura líquida está presente em uma quantidade suficiente para dispersar as pérolas de géis nele e, por meio disso, uma maioria de pérolas de géis permanecer substancialmente intacta por, no mínimo, 4 horas depois de resfriamento abaixo de cerca de 30<198>C. Métodos para confecção de agentes tropicalizantes e utilização dos agentes para tropicalizar produtos de chocolate ou produtos análogos ao mesmo, assim como também estão incluídos os artigos de chocolate ou de produto análogo ao chocolate resultantes.
