Abstract

"FARINHA DE FEIJãO-SOJA E MéTODO PARA A PRODUçãO DA MESMA". A invenção se refere a um método para produção de farinha de feijão-soja de feijões-soja, consistindo no descascamento dos feijões-soja a uma razão de descascamento igual ou mais alta do que 95%, quebra e padronização do tamanho dos feijões-soja descascados até alcançar uma distribuição de tamanho de partícula no qual 90% dos tamanhos de partícula de soja varia de 100 <109>m a 1 mm por exposição dos feijões-soja descascados a forças de impacto, desativação do sistema de enzima das partículas de feijão-soja desse modo trituradas e dimensionalmente padronizadas, e trituração de referidas partículas de soja dé tamanho uniforme até alcançar uma distribuição de tamanho de partícula na qual 95% das partículas de soja tem tamanhos de menos do que 100 <109>m por exposição das referidas partículas de tamanho uniforme, desativadas e trituradas a forças de cisalhamento. Referida invenção também se refere a uma farinha de feijão-soja que é produzida preferivelmente pelo método da invenção, no qual o tamanho de partícula máximo é menor do que 100 <109>m, o sistema de enzima de feijão-soja é pelo menos parcialmente desativado pelo calor, e o teor de casca mede menos do que 0,5 massa %.
