Abstract

"MéTODO PARA A REDUçãO DO TEOR DE ACRILAMIDA EM PRODUTOS ALIMENTìCIOS à BASE DE MILHO, PRODUTOS ALIMENTìCIOS à BASE DE MILHO COM BAIXO TEOR DE ACRILAMIDA, E ARTIGOS COMERCIAIS". Trata-se de um método para a redução de acrilamida em produtos alimentícios à base de milho, produtos alimentícios à base de milho que têm teores reduzidos de acrilamida e um artigo comercial. Em um aspecto, o método inclui a redução do teor de asparagina no material alimentício à base de milho antes do aquecimento final (por exemplo, cozimento). Em outro aspecto, o método inclui a adição, ao material alimentício à base de milho, de uma enzima capaz de hidrolisar o grupo amida da asparagina livre. Em ainda outro aspecto, um artigo comercial comunica ao consumidor que um produto alimentício à base de milho tem teor reduzido ou baixo de acrilamida ou de asparagina.
