Abstract

"ALTERNATIVA DE CREME SEM GELATINA DE FASE AQUOSA CONTìNUA E USO DE UMA MISTURA GRAXA". A presente invenção trata de alternativas de creme sem gelatina de fase aquosa contínua para serem servidas com colher e/ou espalhadas que compreendem de 10 a 50 % em peso de uma mistura graxa e até 5 % em peso de um biopolímero diferente da gelatina como espessante, além da água como fase contínua, o referido creme apresenta um valor de Stevens a 5<198>C (S~ 5~) de mais de 100 gramas, no qual a mistura graxa compreende gordura(s) vegetais e 5 a 75 % em peso de gordura láctea, e no qual a mistura graxa apresenta um teor de gordura sólida a 5<198>C (N5) e a 15<198>C (N~ 15~) tal que a razão entre N~ 15~e N~ 5~ (ou seja, N~ 15~/N~ 5~) seja inferior a 0,60.
