Abstract
ESTABILIZANTES DE MCC/HIDROCOLóIDE E COMPOSIçõES COMESTìVEIS COMPREENDENDO OS MESMOS. A presente refere-se a estabilizantes compreendendo MCC e um hidrocolóide co-processados, composições comestíveis compreendendo os estabilizantes, e processos para fazer as composições comestíveis. As composições comestíveis podem ser preparadas a partir de um estabilizante compreendendo MCC e um hidrocolóide, junto com uma fonte de proteína e/ou suco. As composições da invenção podem incluir bebidas de pH baixo compreendendo o estabilizante de MCC, uma fonte de proteína e/ou um suco de fruta ou vegetal ou outro líquido com aroma de fruta, opcionalmente com uma quantidade adicional de hidrocolóide e acidulante, adoçante, agentes tamponantes, modificadores de pH ou sais estabilizantes.
