Abstract

MéTODO PARA ESTABILIZAçãO E PREVENçãO DE COAGULAçãO DE PROTEìNAS EM LEITE, LEITE CONTENDO COAGULANTE ESTABILIZADO E RESPECTIVO USO. A invenção refere-se a um método para estabilização e prevenção de coagulação de proteínas em leite compreendendo um coagulante consistindo em >400 ppm de um cátion divalente não-complexado e/ou uma quantidade de um ácido dando um pH <6,2 ao leite, compreendendo as etapas: a) adição ao leite de 0,0005 a 0,1% de carragenina e/ou gelano como uma mistura hidrocolóide compreendendo pelo menos 0,2% de carragenina e/ou gelano com base no peso total da mistura hidrocolóide, e pelo menos um do cátion divalente e do ácido para se obter uma solução ou dispersão; b) pelo menos precipitação parcial de proteínas da solução ou dispersão através de aquecimento do leite a 120-150 C por 2 a 120 segundos; c) esfriamento da mistura da etapa b) para abaixo de 100 C, de preferência para abaixo de 40 C; e d) aplicação de cisalhamento ou alongamento ao precipitado para se obter uma solução ou dispersão de proteína de cátion divalente estabilizada. A invenção refere-se ainda a leite enriquecido com Ca estabilizado e ao seu uso em secagem por atomização.
