Abstract
PRODUÇÃO DE ISOLADOS DE PROTEÍNA DE SOJA SOLÚVEL ÁCIDA ("8800"). Um produto de proteína de soja possuindo um teor de proteína de pelo menos cerca de 60% em peso (N x 6,25) db, de preferência um isolado tendo um teor de proteína de pelo menos cerca de 90% em peso (N x 6,25) db, é formado por extração de uma proteína de soja com água para formar uma solução aquosa de proteínas com um pH de cerca de 1,5 a cerca de 11, de preferência cerca de 5 a cerca de 7, e separar a solução aquosa de proteínas resultantes da fonte residual de proteína de soja. A concentração de proteína da solução aquosa de proteínas é aumentado para cerca de 50 a cerca de 400 g/L, enquanto a força iônica é mantido substancialmente constante usando uma técnica de membrana seletiva. A solução concentrada de proteína resultante é opcionalmente diafiltrada e um sal de cálcio, de preferência cloreto de cálcio, é adicionado à solução de proteína concentrada e, opcionalmente, diafiltrada para uma condutividade de 5 a cerca de 30 mS. O precipitado formado como resultado da adição de sal de cálcio é removido e o retentado resultando esclarecido é diluído em cerca de 2 a cerca de 20 volumes de água antes da acidificação para um pH de cerca de 1,5 a cerca de 4,4 para produzir uma solução de proteína acidificados claro. A solução de proteína acidificada claro é então concentrada e, opcionalmente, diafiltrada e, opcionalmente, secas. Variações deste procedimento podem ser usadas para produzir um produto de proteína de soja, que é solúvel, transparente e estável de calor em ambientes aquosos ácidos.
