Abstract

PRODUTO ALIMENTìCIO à BASE DE áGUA FORTIFICADO COM CáTION DIVALENTE, USO DE UMA PROTEINA RICA EM LISINA, MéTODO PARA AUMENTAR A CAPACIDADE DE LIGAçãO A UM CáTION DIVALENTE DE UMA PROTEìNA, E, COMPOSIçãO DE PRODUTO DE PROTEINA MODIFICADO. A invenção refere-se a um método para preparar proteínas modificadas tendo uma capacidade aumentada de se ligar a cátions divalentes. Por exemplo, a concentração de cálcio, na qual a agregação induzida por Ca^ 2+^ ocorre, é aumentada submetendo-se uma proteína às condições de reação de Maillard. Tais proteínas modificadas são de uso na fabricação de produtos alimentícios fortificados com cálcio.
