Abstract

DISPOSITIVO E MéTODO PARA FABRICAR SALSICHAS. A presente invenção refere-se a um dispositivo e um método para a fabricação de salsichas a partir de massa, em particular carne de salsicha, com um cabeçote de co-extrusão para co-extrusar a massa e um invólucro de salsicha, em que o cabeçote de co-extrusão compreende um tubo de enchimento para a ejeção da massa, bem como uma matriz de extrusão fixada no tubo de enchimento com um espaço de extrusão para ejetar o material de invólucro. A fim de produzir invólucros de salsicha fortes, o tubo de enchimento se projeta por uma distância X além do espaço anular de modo que o material de invólucro é extrusado através do espaço anular no tubo de enchimento e se solidifica ao longo do tubo de enchimento.
