Abstract
PROCEDIMENTO PARA EMBALAR UM PRODUTO CONSISTENTE EM PEIXE FRESCO, PREFERENCIALMENTE DE SALMONìDEOS, EM EMBALAGENS QUE CONTEM UMA MISTURA DE GASES PARA CONSTITUIR UMA ATMOSFERA MODIFICADA (MAP), PERMITINDO ESTE PROCEDIMENTO O TRANSPORTE DO PRODUTO EM CáMARAS FRIGORìFICAS POR PERìODOS PROLONGADOS. O procedimento inclui as etapas de: Recepção das peças de peixe que foram pré-processadas e mantidas a uma temperatura compreendida entre -1°C e 0°C; Desempacotamento das peças dispondo-as em bandejas gradeadas e distribuindo-as de modo que apresentem a maior exposição de sua superfície; Sanitarização das peças com produto microbicida grau alimento e escorrimento das peças; Envolver ou embolsar de forma individual as peças de peixe, com um material laminar permeável a mistura de gases e impermeável à água; Embalar, em uma embalagem vedável, várias peças previamente envolvidas ou embolsadas e de maneira que a embalagem vedável seja constituída por um material impermeável à mistura de gases; Preenchimento da embalagem vedável com uma mistura de gases constituída por dióxido de carbono em uma quantidade compreendida entre 70 e 95% v/v, não mais de 0,5% v/v de oxigênio, sendo o resto da mistura gasosa principalmente nitrogênio e outros gases residuais, sendo a razão volumétrica peixe: gás compreendida entre 0,7 e 0,9; e vedação da referida embalagem vedável. Uma etapa de resfriamento, a uma temperatura de -1 ,5°C, de conjuntos de peças de peixe se executa em qualquer ponto do procedimento, depois de sanitarizado até vedada referida embalagem vedável. Todo o procedimento se realiza sob uma temperatura ambiente não maior que 4°C e em um período não maior que 30 minutos. De preferência o peixe é salmão.PROCEDURE FOR PACKING A CONSISTENT FRESH FISH PRODUCT, PRECIOUSLY FROM SALMONIDES, IN PACKINGS CONTAINING A MODIFIED ATMOSPHERE (MAP), ALLOWING THE PROCEDURE PRODUCT TRANSPORT IN FRESH PERFORMANCE PRODUCT. The procedure includes the steps of: Receiving fish pieces that have been preprocessed and kept at a temperature between -1 ° C and 0 ° C; Unpacking the pieces by placing them in mesh trays and distributing them so that they have the largest exposure of their surface; Sanitation of the parts with food grade microbicidal product and draining of the parts; Wrap or pocket the fish pieces individually with a gas-permeable, water-impermeable laminar material; Pack, in a sealable package, several parts previously wrapped or pocketed so that the sealable package is made of a gas impermeable material; Filling the sealable package with a carbon dioxide gas mixture in an amount of 70 to 95% v / v, not more than 0,5% v / v of oxygen, the remainder of the gas mixture being mainly nitrogen and other waste gases, the fish: gas volume ratio being between 0,7 and 0,9; and sealing said sealable package. A cooling step at a temperature of -1.5 ° C of fish piece assemblies is performed at any point in the procedure, after sanitizing until the sealed package is sealed. The whole procedure is carried out at an ambient temperature no higher than 4 ° C and no longer than 30 minutes. Preferably the fish is salmon.
