Abstract
USO DE ALTERNAN COMO INGREDIENTE PARA CERTOS GÊNEROS ALIMENTÍCIOS. A presente invenção refere-se ao uso de um alternan como ingrediente para gêneros alimentícios ácidos e a um gênero alimentício ácido compreendendo alternan como ingrediente. A segunda invenção é direcionada ao uso de alternan como um ingrediente estável ao calor em uma formulação de gênero alimentício, e a um gênero alimentício compreendendo alternan como ingrediente, em que o gênero alimentício foi submetido a uma etapa de aquecimento durante sua fabricação.
