Abstract

Un édulcorant encapsulé stabilisé particulièrement utile dans les aliments deshydratés et les boissons en poudre présente d'excellentes caractéristiques de fluidité et de dispersion. On prépare un édulcorant dipeptidique stabilisé sous forme de suspension aqueuse mélangée avec un faible volume d'agent de fluidisation soluble dans l'eau comprenant des polymères pour denrées alimentaires, des hydrocolloïdes et des gommes de manière à former une suspension. Cette suspension est ensuite mélangée avec un agent d'encapsulage dissous comprenant de la maltodextrine, de la gomme arabique, des amidons et des mélanges de ces substances. Ce mélange est séché de sorte que la maltodextrine ou la gomme enrobe et encapsule la composition agent de fluidisation/aspartame en poudre particulaire.
