Elles sont préparées selon une composition et une méthode qui associent les éléments protéiques de manière à être uniquement transformés, afin de produire efficacement un analogue de viande à partir de protéines végétales qui ressemblent beaucoup aux viandes en tranche de style charcuterie, tant en leur apparence, leur goût, leur texture et leur qualité. Lorsque les caractéristiques de composition et les paramètres du système de transformation sélectionnés sont combinés, le produit donne des tranches longues et minces, de texture en grains, qui ressemblent par exemple à des tranches de rosbif ou de dinde."
