Abstract
Procedimiento para formar una suspensión acuosa salada inyectable de una composición de proteína de tejido muscular animal funcional para uso en un proceso de inyección para procesamiento de alimentos con al menos una vía de inyección, donde dicha suspensión acuosa salada inyectable de tejido muscular animal funcional comprende proteínas sarcoplásmicas y proteínas miofibrilares, que comprende las etapas de: a)triturar tejido muscular animal para formar tejido muscular animal triturado, b) mezclar dicho tejido muscular triturado con una composición de un ácido de uso permitido en alimentos para solubilizar la proteína muscular animal en una solución acuosa ácida de proteína muscular animal que tiene un pH entre 2,0-3,7, c) preparar una suspensión acuosa de proteína muscular animal mezclando dicha solución acuosa ácida con una composición alcalina de uso permitido en alimentos para precipitar la proteína muscular animal en solución para formar una suspensión acuosa de partículas de proteína muscular animal que tiene un pH entre 4,7-11,0, d) agregar sal a dicha suspensión acuosa para formar una suspension acuosa salada de proteina animal, y e) triturar dicha suspensión para formar una suspensión acuosa salada inyectable de una composición de proteína de tejido muscular animal funcional incluyendo proteínas sarcoplásmicas y proteínas miofibrilares, en donde dicha suspensión acuosa salada triturada fluye a través de cada vía de inyección durante un proceso de inyección sin bloquear una vía de inyección. Procedimiento para conservar la humedad en tejido muscular.
