Abstract

Se describen métodos y/o técnicas de producción de extractos de frutos secos de uso culinario, con los cuales, simultáneamente, se producen extractos y productos vegetales con propiedades organolépticas favorables, aspecto apetitoso y alto rendimiento de componentes nutricionalmente favorables, y que se pueden efectuar de manera simple, rápida y económica. Además, los métodos descritos permiten procesar frutos secos de uso culinario en su cáscara para hacer uso eficiente del alto contenido de materiales bioactivos presentes en el material de cáscara. Específicamente, la invención se relaciona con un método de procesamiento de frutos secos de uso culinario, que comprende las etapas de: a) adición de agua a los frutos secos de uso culinario para así obtener una suspensión; b) trituración en húmedo de dicha suspensión en una o más etapas hasta que las partículas tengan un tamaño promedio menor que 100 μm; y c) separación de la suspensión en al menos una fase sólida, que comprende sólidos de frutos secos de uso culinario, y una fase líquida, que comprende leche de frutos secos de uso culinario. Además, se divulga una leche de frutos secos, productos comestibles a base de frutos secos, que comprenden dicha fase sólida obtenida a través del método mencionado o la leche de frutos secos, así como también extractos de aceite de frutos secos.
