Abstract

Esta invención se refiere a un procedimiento para la fabricación de azúcar cristalizado a partir de un jugo de azúcar acuoso que contiene azúcares e impurezas orgánicas y minerales, incluyendo iones Ca2+ y/o Mg2+, tal como un jugo de cana de azúcar o de remolacha azucarera, comprendiendo las siguientes operaciones: (a) concentración de dicho jugo de azúcar para dar un jarabe, y (b) cristalización de dicho jarabe para dar un azúcar cristalizado y melazas, caracterizado porque también comprende una operación: (c) de microfiltración tangencial, ultrafiltración tangencial o manofiltración tangencial, realizándose esta operación antes de la operación (a). Se refiere a un procedimiento para la producción de azúcar blanco cristalizado a partir de jugo de azúcar del tipo de jugo de cana de azúcar, que comprende el procedimiento arriba mencionado para la producción de azúcar cristalizado, completado por las operaciones de nueva fusión, decoloración y cristalización.
