Claims (21)

  1. BGL6 BETA-GLUCOSIDASE OG NUKLEINSYRER, DER KODER HERFOR PATENTKRAV
    1.   2. 2. Isoleret polynukleotid ifølge krav 1, hvor %-identitet er beregnet ved hjælp af CLUSTAL-W-programmet i MacVector version 6,5, der er anvendt med standardparametre, herunder en open gap penalty på 10,0, en extended gap penalty på 0,1 og et BLOSUM 30 similaritetsmatrix.

Fremgangsmåde til fremstilling af et BGL6-polypeptid, der har β-glukosidaseaktivitet, hvilken fremgangsmåde omfatter: (a) stabil transformering af en værtscelle med en ekspressionsvektor, der omfatter et polynukleotid som defineret ifølge krav 1; (b) dyrkning af den transformerede værtscelle under egnede forhold til, at værtscellen producerer β-glucosidasen; og (c) genvinding af β-glucosidasen.
  16. 16. Fremgangsmåde ifølge krav 15, hvor værtscellen er en filamentøs svampe- eller gærcelle.
  17. 17. Antisense-oligonukleotid komplementær til den bgl6-kodende sekvens af et messenger-RNA, der koder for et BGL6-polypeptid, der har den sekvens, der er præsenteret som SEQ ID NO: 2, hvor, ved eksponering for en β-glucosidase-producerende værtscelle, oligonukleotidet mindsker eller hæmmer produktionen af β-glucosidase gennem værtscellen.

Fremgangsmåde til forbedring af en gærbrøddej eller gærbolledej eller gærbrød- eller gærbolleegenskaber, hvilken fremgangsmåde i alt væsentligt består af følgende trin: (a) blanding af mindst omkring 10 ppm af en BGL6 ifølge krav 14 med brød- eller bolledejsingredienser for at fremstille en dejblanding; (b) formning eller ilægning i forme af dejblandingen, (c) hævning af dejblandingen og (d) bagning af dejblandingen for at fremstille brød eller boller.
