Claims (8)

  1. DK/EP 2119771 T3 - 1 - PROTEINER
    1. Variantlipidacyltransferase med øjet phospholipidtransferaseaktivitet, hvor enzymet omfatter aminosyresekvensmotivet GDSX, hvor X er én eller flere af følgende aminosyrerester L, A, V, I, F, Y, H, 5 Q, T, N, M eller S; hvor variantenzynict omfatter én eller flere aminosyremodifikationer sammenlignet med en modersekvens ved en hvilken som helst eller flere af aminosyreresteme: S3N, Q, K, R, P eller M; eller E309A; hvor nummereringen er den, der er opnået fra alignment af variantsekvensen med 10 referencesekvensen vist som SEQ ID NO 2 og hvor moderlipidacyltransferasen omfatter aminosyresekvensen vist som SEQ ID NO 28 eller en aminosyresekvens, der har 75 % eller større identitet med SEQ ID NO 28 eller hvor moderlipidacyltransferasen er kodet for af nukleotidsekvensen vist som SEQ ID NO 29, eller en nukleotidsekvens, der har mindst 75 % eller større identitet med sekvensen vist som SEQ ID NO 29.

  5. 5. Fremgangsmåde til enzymatisk degummiering af vegetabilske eller spiselige olier, hvilken fremgangsmåde omfatter behandling af den spiselige olie eller den vegetabilske olie med et variantlipidacyltransferaseenzym ifølge krav 1 for således at hydrolysere størstedelen af de polære lipider (f.eks. phospholipid og/eller glycolipid).

Anvendelse af et variantlipidacyltransferaseenzym ifølge krav 1 i en fremgangsmåde til reduktion af indholdet af et phospholipid i en spiselig olie, hvilken fremgangsmåde omfatter behandling af olien med variantlipidacyltransferaseenzymet for således at hydrolysere størstedelen af phospholipidet, og separering af en vandig fase, der indeholder det hydrolyserede phospholipid fra olien.
  7. 7. Anvendelse af et variantlipidacyltransferaseenzym ifølge krav 1 i biokonversionen af polære lipider 30 (fortrinsvis glycolipider) for at fremstille produkter af høj værdi, såsom carbohydratestere og/eller proteinestere og/eller proteinunderenhedsestere og/eller en hydroxysyreester.
