Claims (23)
1. Valleproteinprodukt som har et forhold mellem valleprotein og kasein i området fra 25:75 til mindre end 50:50, et samlet proteinindhold på mindst 20% på tørstofbasis, og et proteinindhold på 2,5 til 8 vægtprocent, baseret på den samlede vægt af produktet.
2. Valleproteinprodukt ifølge krav 1, hvor forholdet mellem valleprotein og kasein er i området fra 25:75 til 40:60, fortrinsvis 30:70.
3. Valleproteinprodukt ifølge krav 1 eller 2, hvor det samlede proteinindhold går fra 30% til 60% på tørstofbasis, fortrinsvis 40% til 60% på tørstofbasis.
4. Valleproteinprodukt ifølge et hvilket som helst af de foregående krav, hvor produktet er en drikkevare som har et proteinindhold på 3,5% til 7%, baseret på den samlede vægt af produktet.
5. Valleproteinprodukt ifølge et hvilket som helst af de foregående krav, hvor produktet endvidere omfatter supplerende mælkemineraler.
6. Fremgangsmåde til fremstilling af et valleproteinprodukt som omfatter - at underkaste et mælkebaseret råmateriale til mikrofiltrering for at adskille en ideel valle som et mikrofiltreringspermeat og et kaseinkoncentrat som et mikrofiltreringsretentat, - at underkaste mindst en del af mikrofiltreringspermeatet for ultrafiltrering for at tilvejebringe et ultrafiltreringspermeat og et valleproteinkoncentrat som et ultrafiltreringsretentat, - at sammensætte et valleproteinprodukt fra ultrafiltreringsretentatet og et kasein-indeholdende materiale for at tilvejebringe et forhold mellem valleprotein og kasein på 20:80 til mindre end 50:50 og et samlet proteinindhold på mindst 20% på tørstofbasis, og hvis ønsket, fra andre ingredienser.
7. Fremgangsmåde ifølge krav 6, hvor forholdet mellem valleprotein og kasein af valleproteinproduktet er 25:75 til mindre end 50:50, fortrinsvis omkring 25:75 til omkring 40:60, mere fortrinsvis omkring 30:70.
8. Fremgangsmåde ifølge krav 6 eller 7, hvor den samlede proteinindhold går fra 30% til 60% på tørstofbasis, fortrinsvis 40% til 60% på tørstofbasis.
9. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 8, hvor produktet er en drikkevare som har et proteinindhold på 2,5 til 8 vægtprocent, fortrinsvis 3,5% til 7%, baseret på den samlede vægt af produktet.
10. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 9, hvor det kaseinindeholdende materiale vælges fra en gruppe bestående af mikrofiltreringsretentatet, mælk, et surmælksprodukt, et syrnet mælkeprodukt, et fermenteret mælkeprodukt og en hvilken som helst kombination af disse.
11. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 10, hvor det mælkebaserede råmateriale er skummetmælk.
12. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 11, hvor ultrafiltreringspermeatet underkastes nanofiltrering for at tilvejebringe et nanofiltreringsretentat og -permeat.
13. Fremgangsmåde ifølge krav 12, hvor nanofiltreringspermeatet underkastes omvendt osmose for at tilvejebringe et omvendt osmose retentat og permeat.
14. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 13, hvor diafiltrering anvendes med mi krofiltre ring, ultrafiltrering og nanofiltrering.
15. Fremgangsmåde ifølge krav 14, hvor mikrofiltreringsretentatet, ultrafiltreringsretentat og nanofiltreringsretentat anvendes til sammensætning af valleproteinproduktet.
16. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 15, hvor mælkeråmaterialet underkastes en varmebehandling ved et temperaturområde fra 65°C til 95°C i 15 sekunder til 10 minutter forud for mikrofiltrering.
17. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 16, hvor supplerende mælkemineraler føjes til valleproteinproduktet.
18. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 17, hvor frigivelse af glykomakropeptider i valleproteinproduktet forhindres.
19. Fremgangsmåde ifølge et hvilket som helst af kravene 6 til 18, hvor bismagen af valleproteinproduktet reduceres, elimineres eller maskeres.
20. Valleproteinprodukt ifølge et hvilket som helst af kravene 1 til 5 eller fremstillet ved en fremgangsmåde ifølge et hvilket som helst af kravene 6 til 19 til anvendelse som et fødevareprodukt, dyrefoder, næringsprodukt, kosttilskud, fødevareingrediens, helsekost og farmaceutisk produkt.
21. Anvendelse af valleproteinproduktet ifølge et hvilket som helst af kravene 1 til 5 eller fremstillet ved en fremgangsmåde ifølge et hvilket som helst af kravene 6 til 19 som et fødevareprodukt, dyrefoder, næringsprodukt, kosttilskud, fødevareingrediens eller helsekost.
22. Anvendelse ifølge krav 21, hvor valleproteinproduktet anvendes som et funktionelt fødevare- og/eller et næringsprodukt.
23. Anvendelse af valleproteinproduktet ifølge et hvilket som helst af kravene 1 til 5 eller fremstillet ved en fremgangsmåde ifølge et hvilket som helst af kravene 6 til 19 i fremstillingen af surmælksprodukter og/eller syrnede friske produkter, såsom yoghurt, fermenteret mælk, viili, fermenteret fløde, syrnet fløde, kvark, kernemælk, kefir, og mejeriprodukt-shotdrikkevare.
