Abstract

La presente invención se relaciona al tratamiento de leche y de productos lácteos tal como residuos de leche con un sistema mejorado de lactoperoxidasa. El sistema mejorado de lactoperoxidasa se activa por la adicion de una fuente de peróxido de hidrogeno y de un agente oxidable, tal como un haluro a la leche para inactivar patógenos bacterianos. El sistema mejorado de lactoperoxidasa se puede utilizar solo o junto con la pasteurización para reducir o eliminar la carga bacteriana en productos lácteos.
