Abstract
Un proceso revolucionado del atún, según esta invención, generalmente comprende los pasos de descongelación del atún congelado, descabezado y eviscerado, fileteado, desollado, limpieza del filete de atún desollado, precocinado, enfriado, empacado del lomo de atún limpio y precocinado, y esterilización del lomo de atún empacado, o congelación del lomo de atún. No solo el proceso según esta invención reduce la utilización de energía a la mitad, sino que también reduce significativamente el tiempo requerido para cocinar y enfriar. Por lo tanto, el tiempo total de procesamiento se reduce significativamente de al menos 8 horas en el proceso convencional a menos de 30 minutos.
