Il tonno o altro pesce da inscatolare viene sottoposto meccanicamente, prima della cottura e dopo eventuale operazione di taglio, ad eviscerazione, spellatura, spinatura, pulitura, salatura e infine a zangolatura, dopodiché il prodotto così trattato viene cotto a vapore e confezionato.
