Four de cuisson selon l'une des revendications précédentes, où la soufflerie radiale comprend une roue à palettes, qui présente dans le plan de séparation une plaque de séparation, et à la zone d'aspiration associée à l'ouverture d'aspiration de l'air de refroidissement des palettes de guidage de l'air de refroidissement reliées à la plaque de séparation et orientées sensiblement perpendiculairement à la plaque de séparation.
  4. Four de cuisson selon la revendication 3, où la roue à palettes présente à la zone d'aspiration associée à l'ouverture d'aspiration des buées des palettes de guidage des buées dont la hauteur est plus petite que la hauteur des palettes de guidage de l'air de refroidissement.
  5. Four de cuisson selon la revendication 4, où la hauteur des palettes de guidage des buées est comprise entre environ 1 mm et environ 5 mm, et elle est de préférence d'environ 2 mm.
  6. Four de cuisson selon l'une des revendications 3 à 5, où la hauteur des palettes de guidage de l'air de refroidissement est comprise entre environ 8 mm et environ 40 mm, de préférence entre environ 10 mm et environ 25 mm.
  7. Four de cuisson selon l'une des revendications 3 à 6, où les palettes de guidage de l'air de refroidissement respectivement les palettes de guidage des buées s'étendent de préférence selon une courbure convexe, en regardant dans la direction de rotation, en cours de fonctionnement de la roue à palettes.
  8. Four de cuisson selon l'une des revendications 3 à 7, où les espaces intermédiaires entre les palettes de guidage de l'air de refroidissement vers l'ouverture d'aspiration de l'air de refroidissement sont fermés au moins partiellement par un recouvrement.
  9. Four de cuisson selon l'une des revendications précédentes, où l'écart de la soufflerie radiale de l'ouverture d'aspiration des buées et de la zone, entourant l'ouverture d'aspiration des buées, de la paroi de l'enceinte de soufflage est réglé sensiblement à une valeur entre environ 1 mm et environ 4 mm, et de préférence entre environ 1,5 mm et environ 3,5 mm.
  10. Four de cuisson selon l'une des revendications précédentes, où l'écart de la soufflerie radiale relativement à l'ouverture d'aspiration de l'air de refroidissement et à la zone, entourant l'ouverture d'aspiration de l'air de refroidissement, de la paroi de l'enceinte de soufflage est réglé sensiblement à une valeur entre environ 4 mm et environ 10 mm, et de préférence entre environ 5 mm et environ 8 mm.
  11. Four de cuisson selon l'une des revendications précédentes, où est relié à l'ouverture de soufflage de l'enceinte de soufflage un canal d'écoulement pour évacuer le mélange de buées et d'air de refroidissement du four de cuisson, la paroi du moufle de four présente une ouverture d'introduction pouvant être fermée par une porte pour introduire des aliments à cuire dans l'enceinte de cuisson, et le canal d'écoulement débouche au-dessus de la porte ou dans une zone supérieure de la porte dans l'environnement du four de cuisson.
  12. Four de cuisson selon l'une des revendications précédentes, où l'ouverture de sortie des buées dans la paroi de moufle est reliée à l'ouverture d'aspiration des buées dans la paroi de l'enceinte de soufflage par un canal de guidage des buées.
  13. Four de cuisson selon l'une des revendications précédentes, où l'enceinte de soufflage avec la soufflerie radiale est disposée au-dessus du plafond du moufle de four.
