COMPRENDE DISOLVER LA PROTEINA INSOLUBLE EN AGUA EN UN DISOLVENTE PARA FORMAR UNA SOLUCION DE LA PROTEINA; Y PONER EN CONTACTO UN MEDIO ACUOSO CON LA SOLUCION DE PROTEINA BAJO CONDICIONES SUFICIENTES PARA FORMAR MICROPARTICULAS UNIFORMES, EXPRESABLES EN AGUA, DE LA PROTEINA EN EL MEDIO ACUOSO. LA SUSPENSION ASI OBTENIDA SE PUEDE EMPLEAR COMO SUSTITUTO DE LA MAYORIA DE LAS GRASAS DIETETICAS O PARA ENCAPSULAR MOLECULAS SELECCIONADAS. LAS PROTEINAS INSOLUBLES EN AGUA USADAS EN EL PROCEDIMIENTO PUEDEN SER MODIFICADAS QUIMICA O ENZIMATICAMENTE PARA MEJORAR LAS PROPIEDADES DE LAS MICROPARTICULAS.
