LA COMPOSICION SALINA ES PREFERIBLEMENTE UN PROPIONATO SODICO, PROPIONATO CALCICO SIENDO EMPLEADOS EN UNA PROPORCION INFERIOR AL 1% DEL PESO. PREFERIBLEMENTE ENTRE EL 0.05 Y 0.5% DEL PESO DE LA CARNE. CON ESTE PORCENTAJE NO SE IMPARTE SABOR ALGUNO AL PRODUCTO CARNICO.
