Abstract
Producto alimenticio que comprende una masa sustancialmente sólida a base de chocolate o análogo de chocolate en contacto con un medio húmedo en estado no helado, con un contenido en agua libre local comprendido entre 45 % y 88 %, presentando dicha masa sustancialmente sólida una débil reabsorción de agua en las condiciones de conservación apropiada, caracterizada porque la masa sustancialmente sólida de chocolate o análogo de chocolate comprende en porcentaje en peso: - materia grasa 43 a 80 %. - cacao seco y desgrasado < 18 % - leche en polvo descremada < 17 % - AZúCARES > 13 % siendo la proporción en peso cacao seco y desgrasado/(azúcares y eventualmente leche en polvo descremada) inferior a 0, 45 y siendo la masa sólida tal que para un medio húmedo que presenta un contenido en agua libre local comprendido entre 45 y 88 %, la magnitud (rr) es inferior a 3, siendo la magnitud T definida por la igualdad (1): -r= (-[agua] + 0, 37) x MG + (5, 25 x [agua]-1, 67) x (S + PLE) + (26, 2 x [agua]-9, 6) x C + (61 x [agua]-14, 5) x (S + PLE) x C con: - [agua] es el contenido en agua libre local de la fase húmeda en contacto (en g/g), - MG es el contenido en materias grasas del chocolate o equivalente (en g/g), - S + PLE es el contenido en azúcares + leche descremada en polvo del chocolate o equivalente (en g/g), - C es el contenido en cacao seco y desgrasado del chocolate o equivalente (en g/g).
