Abstract
"PRODUTO ALIMENTìCIO QUE COMPREENDE UMA MASSA SUBSTANCIALMENTE SóLIDA A BASE DE CHOCOLATE OU DE ANáLOGO DE CHOCOLATE EM CONTATO COM UM MEIO úMIDO". A invenção refere-se a um produto alimentício que compreende uma massa substancialmente sólida à base de chocolate ou de análogo de chocolate em contato com um meio úmido no estado não congelado, com um teor de água livre local compreendido entre 45 e 88%, a dita massa substancialmente sólida apresentando uma baixa retornada de água nas condições apropriadas de conservação, caracterizado pelo fato de que a massa substancialmente sólida de chocolate ou de análogo de chocolate compreende em percentagem em peso: matéria gordurosa 43 a 80%, cacau seco e desengordurado < 18%, pó de leite desnatado < 17%, açúcares > 13% a proporção em peso de cacau seco e desengordurado/(açúcares e eventualmente pó de leite desnatado) sendo inferior a 0,45 e a massa sólida sendo tal que para um meio úmido que apresenta um teor de água livre local compreendido entre 45 e 88%, a grandeza (t) é inferior a 3, a grandeza r sendo definida pela igualdade: <sym> = (-[água] + 0,37) x MG + (5,25 x [água] 1.67) x (S + PLE) + (26,2 x [água] - 9,6) x C + (61 x [água] - 14,5) x (S + PLE) x C.
