EL PROCEDIMIENTO PARA LA PRODUCCION DE SALES DE METALES ALCALINOS Y SALES DE METALES ALCALINOTERREOS DE L ACIDO ASCORBICO 2 MONOFOSFATO CONSISTE EN HACER REACCIONAR UN L ACIDO ASCORBICO 2 POLIFOSFATO BAJO CONDICIONES ALCALINAS CON UNA SAL DE METAL ALCALINO O SAL DE METAL ALCALINOTERREO DE L ACIDO ASCORBICO, DETERMINANDOSE LAS CANTIDADES DE LA L - SAL DEL ACIDO ASCORBICO Y DEL HIDROXIDO DEL METAL ALCALINOTERREO EMPLEADO COMO BASE DE TAL MANERA QUE SE MANTIENE EL INDICE DE PH DEL MEDIO DE REACCION ENTRE 8 Y 11 APROXIMADAMENTE Y TIENE LUGAR UNA TRANSMISION GRADUAL DE UN GRUPO FOSFATO DEL POLIFOSFATO A LA L SAL DE ACIDO ASCORBICO, HASTA QUE EL POLIFOSFATO SE HA CONSUMIDO Y SOLO HAY L ACIDO ASCORBICO 2 SAL DE MONOFOSFATO. EL L ACIDO ASCORBICO 2 POLIFOSFATO SE PREPARA PREFERENTEMENTE IN SITU Y SE EMPLEA HIDROXIDO DE CALCIO COMO BASE. INDEPENDIENTEMENTE DE SI EL L ACIDO ASCORBICO 2 POLIFOSFATO SE PREPARA POR SEPARADO O IN SITU, SE EMPLEA PREFERENTEMENTE METAFOSFATO SODICO COMO AGENTE DE FOSFORILIZACION. OTRO ASPECTO DE LA PRESENTE INVENCION CONSISTE EN QUE UNA VEZ CONCLUIDA LA REACCION, EL ENFRIAMIENTO Y LA DILUCION, LA MEZCLA OBTENIDA SE SECA POR PULVERIZACION HASTA ALCANZAR UNA VISCOSIDAD IDONEA.
